Ingredients

  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1/4 cup roasted red peppers finely chopped
  • 2 green onions finely chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper optional
  • Salt and pepper to taste
  • 1/2 cup crushed Nacho Cheese Doritos or your preferred coating
  • 1 tbsp paprika
  • 1 tbsp black sesame seeds
  • Pretzel sticks for stems
  • Fresh parsley leaves for garnish

Instructions

  • In a medium bowl, combine cream cheese, shredded cheddar cheese, roasted red peppers, green onions, garlic powder, and cayenne pepper. Mix with a wooden spoon until evenly combined. Season with salt and pepper to taste.
  • Cover the cheese mixture and chill in the refrigerator for about an hour.
  • Prepare your selected coatings by placing them on small plates. Use crushed Nacho Cheese Doritos, paprika, and black sesame seeds as coatings. To crush the Doritos, place them in a plastic bag and smash them with a rolling pin until you have fine crumbs.
  • Using a tablespoon measuring scoop, portion out the cheese mixture and roll into balls. Continue until all of the cheese mixture is used.
  • Roll each cheese ball in your selected coating(s) and set aside.
  • Use a wooden skewer to make vertical lines up the sides of each ball and across the top to create a pumpkin-like appearance.
  • Insert half of a pretzel stick into the top center of each cheese ball to resemble a pumpkin stem. Garnish with a small parsley leaf if desired.
  • Refrigerate the mini cheese balls until ready to serve.
