Butter bean, chorizo & spinach baked eggs
Ingredients
- ½ tbsp olive oil
- 1 red onion sliced
- 1 garlic clove chopped
- 1 tsp chilli flakes
- 100 g chorizo sliced into thin rounds
- 400 g can butter beans drained
- 100 g spinach
- 4 medium eggs
- small handful coriander optional
Instructions
Step 1
- Preheat the oven to 220C (200C for fan ovens) or gas mark 7. Warm the oil in a medium-sized frying pan over medium heat (use an ovenproof pan if available). Add the sliced onion and cook for around 3 minutes until it begins to soften.
Step 2
- Next, add the chopped garlic, chilli flakes, and chorizo slices to the pan, frying for another 2 minutes. Stir in the butter beans along with a pinch of salt, and continue cooking for 2 minutes. Toss in the spinach with a splash of water, stirring until the spinach wilts. Take the pan off the heat.
Step 3
- If your frying pan isn’t oven-safe, transfer the mixture to a medium casserole dish. Use the back of a spoon to create four small wells in the mixture, then crack an egg into each one. Season with salt, pepper, and more chilli flakes if desired. Place the dish in the oven and bake for 5-6 minutes, or until the egg whites are set but the yolks remain runny. Garnish with chopped coriander before serving, if you like.
Okay, confession time—I’ve never liked tofu, but I gave the coconut tofu curry a shot, and wow… I’m actually a tofu fan now! the coconut milk makes it so creamy and flavorful.
